«Nan Khatai» little biscuits made with semolina, pistachio nuts and cardamom - Green Darjeeling tea
For 20 biscuits
15 minutes
Difficulty*
• 80 g ghee (or butter)
• 70 g icing sugar
• 125 g wheat flour
• 50 g powdered almonds
• 30 g dessert semolina
• ½ tsp powdered cardamom
• 1 to 2 tbs sweetened condensed milk
• A few pistachio nuts
1. Mix the ghee and the icing sugar together.
2. Add the sweetened condensed milk. Bring to the boil again stirring regularly so that the mixture thickens and is nicely smooth. Filter.
VARIATIONS
Iced Chai Massala
For a more summery version, add a little rosewater to the hot tea and leave to cool. Serve cold with ice. Decorate with pistachio nuts.
Pumpkin Chai latte
Add pumpkin puree to the hot tea. Whisk the mixture until the preparation is smooth. Pour into cups, cover with whipped cream and sprinkle powdered cinnamon on top. Serve immediately.
Vegan
For a vegan Chai Masala, replace the condensed milk with almond milk. If there is no jaggery in your cupboards, you can use agave syrup.
