The Tourags' favourite tea, our organic mint tea is a green China tea whose leaves are rolled into tiny dark green pearls which crackle in the teapot, which gave it its name: Gunpowder.
The desert nomads offer green mint tea to passing travellers following an unchanging ritual: three brews are served successively in little glasses, from the sweetest to the most bitter. The three teas symbolise life, love and death.
Our green tea with its very vivacious, vegetal and fresh taste contains a large number of mint leaves. Drink piping hot for its thirst-quenching and digestive benefits.
Green mint tea Shortbread with mint jelly
For 20 biscuits
Difficulty*
• 30 cl water
• 350 g sugar
• 3 tbsp terre d’Oc mint tea
• Juice of one lemon
• 1.5 g agar-agar
• 1 pinch of powdered Organic green colouring
• 2 shortcrust pastries
• 20 g icing sugar
1. Put the water, sugar, mint tea and lemon juice in a small saucepan. Bring to the boil, cover and leave to infuse about ten minutes.
2. Filter the syrup, add the colouring for the desired colour.
3. Dilute the agar-agar in 2 tbsp of syrup, add to the preparation, and bring to the boil. Pour into sterilized jars and leave in the fridge for at least 5 hours.
4. Preheat oven at 165°C.
5. Cut your biscuits with a pastry-cutter. Make a smaller hole in the middle of half the biscuits. Bake in oven for 10 to 12 minutes making sure that the biscuits do not go brown. Leave to cool.
6. Sift a little icing sugar on the biscuits with a hole in the middle. With a piping bag, pipe a little mint jelly on the whole biscuits and cover with the biscuits with holes.
