The best white teas are produced in Fujian, from the Bai Dai variety, which has downy leaves and buds. They are from a fine harvest (the terminal bud and the first two leaves which ressemble the petals of a peony and which give it its name BAI MU DAN, or from an imperial harvest (only the terminal bud) and then worked in just two operations which consist of a long withering in the open air and then a hot air drying to trigger dessication. The tea is then sorted by hand and packaged. White teas are appreciated all over the world for their delicate flavours and their rich antioxidant polyphenol content due to the fact that the majority of active principles of the tea are to be found in the young shoots and buds.
