Sweet and sophisticated.
Often called red tea, rooibos is not actually a tea. It does not come from Camelia Sinensis but from a spiny bush: Aspalanthus linearis. It only grows in South Africa in mountain areas with a very arid climate. Processed in the same way as black tea with an oxidation process using humidity and heat, the green leaves turn a reddish-brow during this stage and immediately give off a strong vanilla flavour. When infused, rooibos gives a sweet, amber-coloured, strong liquor. It has many refreshing and calming properties and is totally caffeine-free. It is the ideal drink for children. Green rooibos is simply dried to keep its green colour and its flavour is more vegetal.
